I seasoned this almost 3 lbs bone in ribeye at lunchtime with Westero Steak Seasoning this gave the steak a chance to dry brine.
I loaded up the Z Grills with Jax Jealous Devil pellets and set it to 250. I used my Inkbird INT-11P-B wireless thermometer so I could track the cook from my phone.
I like my steak RARE so I pulled it at 108° f After resting it was time to sear. for this I used my Lancaster cast iron vintage style skillet with Bacon Up. I recommend using animal fats and avoiding all seed oils. Having a stove the the Outland Living Princeton is a must.
Finally good tongs are a must for me it's my Lamson American Made grill tools and Knives.
