Today we are tackling another pie crust conundrum! Blind Baking! If you are not familiar with blind baking, then you will be interested to know that it is not a difficult thing. In fact, blind baking is nothing more than baking the pie crust before you fill it. This can be required for cold pies such as chocolate cream, banana cream or coconut cream, but it can also be necessary for other situations like a baked custard pie or in my case another pie that I will be sharing with you in an upcoming edition of Pies-Giving!

The trick to blind baking is two fold. First you have to dock your dough and next you have to weight it down. I have simply used some dry kidney beans that I reserve for pie baking because once you use them like this they will not be able to be cooked.
