Here's a delicious and easy recipe for vegan japchae! I should really say that it's a recipe for japchae that happens to be vegan. What's so special about japchae? Honestly, it's the sweet potato vermicelli. These noodles are a non-negotiable for japchae. Other than that, you can use any variety of vegetables that you have on hand. The key to making this dish is to cook each vegetable individually, which I know, seems like a lot. Once you have your ingredients prepped however, it at all goes very quickly. INGREDIENTS
250 g sweet potato vermicelli
2 cups of spinach
2 spring onions cut into 2 inch pieces
1 medium carrot cut into matchsticks
1/2 cup red capsicum sliced
1/2 cup green capsicum sliced
1 cup mushrooms sliced
1 large clove of garlic, crushed
1 tbsp vegetable oil (and more for cooking each veggie)
4 tbsp soy sauce (a little less or more depending on your preference)
1 tbsp sugar (white or brown will do)
1 tsp toasted sesame oil
sesame seeds for garnish
