Baingan Bharta Recipe | Baigan Ka Bharta | Smoky Baingan Ka Bharta
In Hindi, Baingan refers to eggplant or aubergine, and bharta means mashed. This recipe is popular in North India and is prepared by fire-roasting eggplant and cooking it with Indian spices.
Traditionally the baingan was roasted in a tandoor or on a Chula (charcoal was used to burn fire), and as a result, baingan would get infused with the aromatic charcoal flavor. Nowadays, we don’t have tandoor or Chula at home, so in our recipe, the eggplant is roasted on an open gas flame. In addition, we have immersed burnt charcoal as a twist to give it a charcoal-infused effect.

Ingredients:-
For Roasting -
- Brinjal (बैंगन) – 1
- Tomato (टमाटर) - 1
- Green Chillies (हरी मिर्च) – 2
- Garlic (लहसुन) – 2 clove
- Ghee (घी) – 2 tsp
Other Ingredients -
- Ghee (घी) – 2 tbsp
- Hing (हिंग) - ¼ tsp
- Onion (प्याज) - 1 chopped
- Ginger (अदरक) - ½ inch chopped
- Haldi (हल्दी) - ¼ tsp
- Coriander powder (धनिया पाउडर) - ½ tbsp.
- Red chili powder (लाल मिर्च पाउडर) - ½ tbsp.
- Kitchen King Masala (गरम मसाला) - ¼ tsp
- Salt (नमक) – as per taste
- Fresh coriander (ताजा धनिया)
Smoky Flavour-
- Ghee (घी) – 2 tbsp
- Charcoal(कोयला) – 1 piece
- red chili powder - pinch
