Uyghur Polo is from Xinjiang Uyghur region in China. This Chinese Lamb Rice is called Polo, Pilaf, Polov or Pulao, depending on the region you are from. This Lamb Rice has the goodness of lamb, whole spices, aromatics, carrots and raisins mixed together in one bowl. Xinjiang Uyghur Food is extremely delicious and heartwarming. Uyghur Food is usually Halal Chinese Food which is influenced by cooking style in Central Asian Countries.
To cook Uyghur Polo, wash and soak the rice for an hour in advance. Then using a wok or deep cooking pot, fry the sliced onions until golden. Take the onions out of the wok and throw in the lamb pieces. Fry the lamb pieces to develop some golden color in the edges and then add ginger paste and whole garlic heads. Cover and let the lamb pieces cook.
After 30-35 min when the lamb pieces are partially cooked, take out the garlic heads and add sugar, followed by onions and whole spices. Saute for a min and then add the rice. Saute and then add carrots followed by chicken stock. Season with salt and taste-test before covering with lid. Seal the lid with a kitchen towel. Slow for around 45min-1 hour.

850 gm Lamb Pieces (bones in)
2 medium sized Yellow Onion
2 Garlic heads
1 tsp Ginger (grated)
5 Carrots
1 cup Raisins
1 ½ inch Cinnamon
1 StarAnise
1 Bay Leaf
1 Black Cardamom
¼ tsp Sichuan Peppercorns (whole)
2-3 Dry Whole Chillies
1 tsp Cumin Seeds
1 tsp Cumin Powder
1 tsp Sugar
Salt (to taste)
3 cups Chicken Stock
Ingredients for Salad
1 English Cucumber
1 Orange
2 small Carrots
1 small Beetroot
1 Shallot
1 Green Chili
1 tsp Black Vinegar
Cilantro (garnish)
Sugar (to taste)
Salt (to taste)
Red Onion Pickle
1 Red Onion
½ cup warm water
½ cup apple cider vinegar
¼ tsp whole peppercorns
¼ tsp coriander seeds
¼ tsp cloves
½ tsp chili flakes
½ tsp sugar
