Roasted Red Pepper Smoked Gouda Soup
* 2 - 14.5 oz cans fire roasted tomatoes (You can also roast the tomatoes yourself)
* 12 ounce jar roasted red peppers (You can also roast the peppers yourself)
* 3 cups chicken stock (you can also use a tomato or vegetable stock)
* 2 tablespoons tomato paste
* 2 teaspoons dried basil
* alt
* 1 teaspoon dried oregano
* black pepper
* 1 medium onion, diced
* 3 large cloves garlic, minced
* 3 tablespoons butter
* 1 cup of smoked gouda cheese
* ½ cup heavy cream (or substitute with soften cream cheese)
Directions
1. Heat slow cooker on low setting (or turn stove on med-low heat)
2. Dice onion, mince garlic, and chop up oregano and basil
3. Place cans of roasted tomatoes, chicken stock, roasted red peppers, tomato paste, basil, and oregano into pot
4. Season with salt and pepper
5. Place butter in skillet and sauté onions and garlic until onions are translucent and garlic is fragrant
6. Transfer onions and garlic to pot with other ingredients, cover and cook on low for 4 hours
7. After four hours take the ingredients of the pot and transfer to blender or food processor
8. Pour the blended ingredients back into the pot
9. Add whipping cream and grated cheese to the pot, stir and let cook for another hour
10. Enjoy
