Sourdough focaccia
•400g bread flour
•340g water
•64g sourdough starter
•9g salt
Mix, rest 20 mins, 1st coil fold, rest 20 mins, 2nd coil fold, rest 20 mins, third coils fold, rest overnight. In the morning, oil your pan and dough, transfer dough to the pan and let rise again before topping and baking at 375 (convection) for 25 mins or until your bread reaches 200 F inside and is golden brown on top.
