How to select and prepare lotus root for cooking
I have been asked by a few people to explain the process of preparing and cooking Lotus root. It is a delightful vegetable that is extremely forgiving. Some people say you can use Lotus root as if you were going to use a potato and I would say that is incorrect apart from frying them as chips. The texture is fresh and crispy, perfect for stir fries, and for an interesting textural element in other dishes, like meatballs and dumplings.
