Profiteroles | Basic Choux Pastry Cream Puffs With Pastry Cream
Recipe
120ml/ 1/2 cup of water
120ml/ 1/2 cup of milk
100g/ 1 stick of unsalted butter
1 tsp of Sugar
Pinch of Salt
120g/ 1 cup of Plain Flour
3 Large Eggs

Chocolate Ganache
75ml of whipping cream
75g of dark chocolate
1 tsp of butter
1 tsp of brown muscovado sugar (optional)
Heat the cream to boiling point in the microwave. Put the rest of the ingredients in a small bowl. Pour the cream over and let it sit for about 5 minutes then stir
The thicker Ganache is the same process. Just use 100g of chocolate and 50ml of whipping cream instead
Chantilly Cream
250ml of whipping cream
2 tbsp of icing sugar
1 tsp of vanilla extract
Whip until stiff
