This is a quick look at the New Shun Kanso Chef's Knife. The multi-purpose Shun Kanso 8″ is perfect for the majority of the cutting jobs in the kitchen. The 8″ length is ideal for a wide variety tackling meat, vegetable, and fruit preparation tasks. The Kanso Chef’s Knife is similar to the Asian style gyoto, with a few welcomed differences. It is a little bit wider at the heal —perfect for push cuts—it also has a little belly from mid-blade toward the tip, which makes this knife very easy to rock, perfect for finely mincing herbs.
