«Mish-mash» is a funny name of a traditional Bulgarian breakfast meaning «mess». Made of tomato, bell pepper, eggs, brynza cheese and sprinkled well with fresh parsley, this omelet comes out unbelievably tasty. And it is cooked quick and joyfully, so an excellent daylong mood is guaranteed!

✅ Ingredients:
• bell pepper – 12 oz /340 g
• tomatoes – 14 oz /400 g
• bulb onion – 6 oz /175 g
• brynza cheese – 7 oz /200 g
• 6 eggs
• dried thyme – 1 tsp
• fresh basil – 1 tsp
• fresh parsley leaves – 2 tbsp /10 g
• ground red pepper – ½ tsp
• vegetable oil – 2 tbsp
• olive oil – 1 tbsp
• salt - to taste
✅ You will need:
• carving board
• pan
• bowl
📙 Preparation:
1. Dice the bulb onion, cut the bell pepper into small wedges, place the tomatoes into boiling water for 30 seconds, then peel and chop.
2. Heat a pan, add 2 tbsp of vegetable oil and fry the bulb onion for 3 minutes over medium heat.
3. Add the bell pepper, 1 tbsp of olive oil into the pan and stirring fry for 5 minutes over medium heat.
4. Add the tomatoes, dried thyme, chopped fresh basil, ground red pepper and salt to taste, stir and simmer for 8-10 minutes over low heat.
5. Add the chopped brynza cheese and stir.
6. Add the eggs and fry stirring constantly over medium heat for 2-3 minutes.
7. When serving sprinkle your mish-mash with the chopped up fresh parsley.
