INGREDIENTS

2 tbsp butter
▢
1 medium-sized onion, finely chopped
▢
2 medium-sized tomatoes, finely chopped
▢
1 tsp ginger-garlic paste / adrak - lahsun paste
▢
1 small sized capsicum, chopped
▢
½ cup peas / matar, fresh / frozen
▢
1 large-sized potato, cubed
½ cup cauliflower, chopped
1 small-sized beetroot
1 medium-sized carrot
1 tsp Kashmiri red chili powder / lal mirch powder
▢
½ tsp turmeric / Haldi
▢
2 tsp pav bhaji masala
1 tbsp coriander powder
▢
salt to taste
▢
1 cup water
OTHER INGREDIENTS:

2 tsp butter
▢
5 pav / bread
▢
½ onion, finely chopped
▢
3 tbsp coriander leaves, finely chopped
▢
1 lemon, sliced
INSTRUCTIONS
Firstly, turn on the instant pot and press SAUTE mode. Add 1 tbsp oil & 2 tbsp butter and add cardamom, clove & pepper.
Now add 1 tsp cumin seeds & fry till aromatic.
Now add onions & fry till golden brown.
Also, add ginger-garlic paste and saute.
Additionally, add capsicum and saute for a minute.
furthermore, saute tomatoes till they turn soft and mushy.
Now add red chili powder, turmeric, coriander powder, salt & pav bhaji masala. Mix it well & fry for a few seconds.
Now add green peas, potato, carrot, beetroot, cauliflower, and saute for a minute.
Also add 1 cup of water and mix well.
Cover with lid and cancel saute mode & pressure cook for 6-8 minutes and mash all the vegetables well.
Optionally, add a tsp of butter for more flavors. And turn on saute mode on low flame & cook for 2-3 minutes. Now add lemon juice and chopped coriander & mix it well.
Now, heat Tawa and add a tsp of butter, and prepared pav bhaji.
further, slit the pav in the center.
spread and toast both sides.
Finally, serve pav bhaji along with toasted pav garnished with few chopped onions, coriander leaves, and a piece of lemon.
