VEGAN CHRISTMAS NEW YEAR’S DINNER DESSERT

Ingredients:
Cassava flour for farofa (2 cups)
2 ½ tablespoons of salted vegan butter
About a teaspoon of Annatto/achiote powder
Pitted olives
Pinch of salt
Instructions: Place the cassava flour in a pan on medium to low heat and make a small hole in the
middle. Add the butter and the annatto powder. Add a pinch of salt. Mix well so the melting butter is
incorporated into the flour. Stir constantly so the mixture does not burn. After about 4 minutes, add the
olives. When the mixture begins to turn brown (approximately another 6 or 7 minutes), remove
immediately from pan into another container. Be very careful because the mixture will be hot.
