Pita Bread Recipe (makes 5-6 pitas):
260g Water
1 tsp Sugar
2 tsp Dry Active Yeast (or 1 packet, I don't double this or the sugar when doubling the recipe)
30g Extra Virgin Olive Oil
375g Bread Flour
13g Kosher Salt (I always use diamond crystal - about 4 tsp)
Assuming you're using a normal oven just crank it as high as it will go. Make sure whatever surface you're baking on (cast iron, pizza stone, etc.) is preheated for 30ish minutes before baking.
