PAPDI NO LOT
CHEF AANAL KOTAK
PREP TIME: 5-10 mins
COOKING TIME: 25-30 mins
INGREDIENTS:
• 4 cup water
• 1 tbsp ajwain
• 1 tbsp cumin seeds
• Salt as per taste
• 7 nos. green chilli
• 1 tbsp oil
• ½ tsp baking soda
• 2 cup rice flour
• 2 tsp oil
FOR SERVING:
• Groundnut oil
• Aachar masala
METHOD:
• Set a saucepan on heat, add water as water boils add ajwain, cumin seeds, salt as per taste, green chilli, oil, baking soda, mix and boil this for 2-3 minutes.
• Further add rice flour and mix with help of wooden rolling pin for 2-3 minutes.
• As this gets cooked transfer this into a bowl, and knead this to make it soft.
• Now, take small portions of dough, give this a medu vada shape and steam it in a steamer for 15-20 minutes.
• As it steams cool it down, cut into pieces and serve it with groundnut oil and aachar masala.
