CINNAMON ROLLS
INGREDIENTS:
¾ cup non-dairy milk
1 packet active yeast
2 1/2 cups whole wheat pastry flour (or gluten free pastry flour, if you are gluten-free)
1 tablespoon baking powder
8 medjool dates
2 teaspoons cinnamon
1/4 cup + 1 tablespoon unsweetened applesauce
Vanilla frosting
SEITAN MARSALA
Sauce
2 tablespoons cornstarch (or more depending on desired thickness)
Freshly ground black pepper
2 cups peeled shallots
1 pound baby bella mushrooms
½ cup marsala wine
1 cup vegetable broth
Optional: agave to desired sweetness
1 pound seitan cutlets
COZY WILD RICE SOUP
Ingredients:
2 tbsp water
1 yellow onion, finely diced
1⁄2 cup carrots, peeled, diced
1⁄2 cup celery stalks, diced
1⁄2 cup button mushrooms,sliced
1 bay leaf
4 cloves garlic, chopped
1⁄2 cup wild rice
1 1⁄2 cups potatoes, peeled and diced
3 1⁄2 cups vegetable broth
1 tbsp old bay seasoning
2/3 cup oat milk
1 cup kale, destemmed and chopped
1 1/2 tbsp nutritional yeast
1⁄4 tsp ground black pepper
