Legua Asado is a perfect addition to your holiday menu. It takes a few hours to make but it worth the wait. The meat becomes meltingly tender and has a rich, deeply flavored sauce. Best serve with steaming rice or even mashed potatoes.
INGREDIENTS:
- 1 pcs ( 1 1/4kg ) beef tongue ( Dila ng Baka ), you can also use pork tongue
in place of beef tongue
- water
- 1 small size carrot
- 1 stalk celery
- 1 medium size onion
- 2 pcs bay leaves
- 1 1/2 tsp salt
- 1 tsp whole peppercorn
- 3 tbsp cooking oil
- 3 cloves garlic, peeled and crushed
- 1 medium size onion, chopped
- 1 1/2 tsp tomato paste
- 1 large size tomato, chopped
- 1 cup red bell pepper, chopped
- 3 tbsp lemon or calamansi juice
- 1/4 cup soy sauce
- 2 to 3 tsp butter
- 2 cups reserved broth, add more broth as needed
- salt and ground black pepper, to taste
- 1/4 cup grated cheese
- 1 tbsp sugar
- 200g pre-cooked peeled chestnuts ( castañas ), you can also use button mushroom
in place of chestnuts
