A wine that will suit perfectly as an aperitif, and with its lightness, airiness and enthusiasm, it is welcome at any occasion. Brut Nature sparkling wine is produced by the classic method of Malvasia, Chardonnay and Istrian Plavina. The style of this wine is defined by Plavina, an old Istrian variety that has been adapted for the production of sparkling wines. Although we have multiple benefits from it, Plavina is a critically endangered grape variety. Plavina is characterized by a low concentration of sugar and high acidity, which gives the perfect ratio for the production of sparkling wines. The grapes are harvested by hand - Malvasia and Chardonnay are pressed immediately after harvest, and the resulting must is added to the grapes from Plavina, where everything is macerated for several days. After pressing, the rest of the fermentation is done in stainless steel barrels. The wine is then aged for a year, partly in stainless steel and partly in wooden barrels. After one year, fresh must is added to the wine before bottling, which starts the fermentation in the bottle. The wine is aged in a bottle on its own lees for about two years, after which it is disgorged and no liqueur is added to it.
