Emeril’s Meat Ravioli is the recipe you will need to make this traditional dish Pasta & Beyond pasta machine. Start with using the pasta maker attachment to make your homemade fresh ravioli pasta and Emeril’s meat grinder attachment to grind your favorite type of meat chunks to fill up your ravioli. Meat Ravioli Recipe
Meat Grinder Attachment
Ingredients:
½ Lb. beef chuck cubed
1 tbsp. olive oil
3 tbsp. onion, minced
1 clove garlic, minced
1 tsp ground fennel
2 tbsp. tomato paste
½ tsp Salt
¼ tsp pepper
4 tbsp. grated Parmigiano
Lasagna Dough
1 batch cup all purpose flour
1 batch cup semolina, extra fine
1 tsp. salt
2 eggs
1 tbsp. olive oil
5 tbsp. water
Egg Wash
1 yolk
3 tbsp. water
Directions:
1. Chill meat in freezer for 30 minutes.
2. Assemble the grinder. Grind the meat.
3. In sauté pan add the olive oil and brown the meat with the onions and garlic.
4. Add the rest of the seasonings except for the cheese. Cook for 2 minutes.
5. Let the meat cool and add the cheese. Set aside.
6. Assemble the pasta machine and use the lasagna disk.
7. Make the pasta to fit a ravioli mold.
8. Spoon about 1 tbsp. of the meat mixture into the mold.
9. Brush the pasta dough with egg wash and top with a lasagna sheet of pasta.
10. Make the ravioli and cut to separate each ravioli.
11. Blanch in salted water and serve with marinara sauce and grated cheese.
