Hi everyone, hope you all doing well and staying safe. So today I am sharing phyllo pastry 2 ways. One will be filled with Spinach and the second one will be Spinach and Cheese.

Spinach Phyllo Pastry
Ingredients
1 box of phyllo dough
1 big pack of spinach chopped
1 onion chopped
1 tbsp olive oil
1 tbsp lemon juice
1 tsp. sumac
1/2 tsp. dried mint
1/2 tsp. cumin
1 tsp paprika
1/2 tsp. cayenne (optional)
Salt and black pepper to taste
Instructions:
In a bowl sprinkle salt over spinach and onions, let sit 5-10 min then squeeze as much water as you can. Add all the spices and oil and lemon juice, set aside. Cut phyllo dough in half, one half will be for the bottom of the pan and the second half will be for the top. Oil the pan, take 2 sheets of phyllo dough place it in the pan and brush oil for every 2 sheets, until all half the phyllo is used, place the spinach filling, distribute evenly, cover with the remaining phyllo, brushing oil every two sheet. Cut into squares and bake in preheated 400 degree oven for about 30-40 min until golden brown.
Ingredients for Spinach and cheese
1 box phyllo
1 big bag of spinach chopped
1 onion chopped
1 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1 tbsp olive oil
1 tbsp lemon juice
1 tsp. sumac
1/2 tsp. cumin
1/2 tsp. dried mint
1 tsp. paprika
salt and pepper to taste
sprinkle salt on spinach and onion, squeeze as much water as you can then mix the rest of the ingredients and use as above.
