Easy and quick Alfredo Tortellini recipe. Only few ingredients to create a soul food. Enjoy rich flavors of Alfredo, chicken and spices. Together with Tortellini pasta this meal will fill the room with smell of pleasure.
Ingredients:
1. Chicken
2. Garlic
3. Spices* (salt, pepper, paprika, onion powder, olive oil)
4. Tortellini pasta
5. Alfredo cream
6. Spinach (optional)
7. Cheese (mozzarella, parmesan)
Directions:
Preheat oven to 350F
1. Cut chicken meat into bite size pieces.
2. Combine garlic with chicken, add olive oil and spices. Mix it all together and let it sit for 5-10 minutes to marinate. (marinated meat always taste better than just seasons while cooking)
3. In a large pot boil water and add 1tbsp of Olive Oil and pinch salt. Add tortellini and cook according to instructions on the package. (Tortellini I used took 14 minutes to cook)
4. In a high heat add marinated chicken to the skillet and cook for about 10 minutes. Since we added olive oil to marinade there is no need to add oil to the skillet. But feel free to add some butter (about 1/4 cup) to make your Alfredo Tortellini even creamier.
5. Once chicken meat is cooked add your favorite Alfredo sauce. Turn the heat down to medium low and cook for a few more minutes. Taste and add more seasoning if needed.
6. Add spinach. About 2 cups will be enough. Don't be afraid of having a lot of spinach once its cooked it will shrink a lot.
7. Turn the heat low and simmer for about 5 more minutes.
8. In a large baking dish combine cooked Alfredo chicken and tortellini. Mix it well
9. Add cheese. (a lot of cheese)
10. Bake Alfredo Tortellini for about 20-25 mins or until cheese is fully melted.
This meal will last for up to 2 days in airtight container, refrigerated.
