So we had a Restaurant Depot Choice brisket sitting in the bottom of the garage fridge for a couple weeks and I've been itching to get the first brisket on the 1975... I'd intended to do a "hot 'n fast" cook averaging around 300f and that's what we did, but in reality the cook averaged 275-325 throughout the day. I woke up late and hadn't prepped the night before, so didn't get the brisket on till 10:30am.. the cook went fine and it was coated in it's own rendered tallow and wrapped in butcher paper till probe tender... So all in all a bit of a rush job, but who cares, I was cooking' on Sunday on the 1975. The brisket turned out fine and each time I cook I learn a little more about to manage the smoker...
