The perfect combination of sweet and sour flavors provided by citrus fruits makes this one of the most favoured recipes.
SWEET AND SOUR FRUITS AND VEGETABLES
Ingredients
8-10 lychees
2 slices of tinned pineapple
¾ medium red capsicum
¼ medium green capsicum
10-15 broccoli florets
1 tbsp oil
3 spring onions
1 cup vegetable stock
2 tbsps tomato ketchup
Salt to taste
2 tsps cornstarch
2 tsps sugar
2 tsps vinegar
Method
1. Heat oil in a non-stick wok.
2. Halve the spring onion bulbs. Cut red and green capsicums into small pieces.
3. Add spring onion to the wok. Quarter each pineapple slice.
4. Add capsicums, broccoli florets and 1 cup vegetable stock to the wok. Add pineapple and lychees.
5. Add tomato ketchup and mix well. Add salt and mix well.
6. Mix cornstarch with ¼ cup water and add 1 tbsp of this mixture to the wok and mix. Cook till the sauce thickens.
7. Add sugar and vinegar and mix well.
8. Transfer into a serving bowl and serve hot.
