Who doesnt LOVE a nice crisp blue cheese wedge? I also used fancy bacon (crispy prosciutto) with homemade dressing and no complaints here!

Blue Cheese Dressing (single serving)

2 tbsp sour cream
2 tbsp mayonnaise
2 tbsp buttermilk (depends how thin you want it to be)
1/2 tsp fresh parsley, chopped
1 tbsp lemon juice
AS MUCH blue cheese as you want (I used 2 tbsp) and more for on top
Salt and pepper to taste
* I wanted this as a dressing, but if you want it as a dip you can double the amount of sour cream and mayo for a thicker product
*if you want a larger batch bump the sour cream, mayo, and buttermilk up to 1/2 cup

Mix all the ingredients in a bowl and enjoy!
