RECIPE
3 cups no-chicken broth
1/2 cup Soy Curls® crumbs
1 (15-ounce) can white hominy, drained
2 garlic cloves, minced
2 poblano chiles, seeds removed, chopped
1 small yellow onion, diced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 cup Herdez Roasted Salsa Verde
2 tablespoon chopped fresh cilantro
In a small bowl, rehydrate Soy Curls® crumbs with 1/2 cup broth. Set aside.
Process 1 cup hominy and 1/2 cup broth in a small blender until smooth.
Using your Instant Pot®, press [SAUTE] to activate [Less] heat setting. Add garlic, poblanos, onion, cumin, and coriander. Cook, stirring occasionally, until veggies are soft, about 5 minutes. If veggies begin to stick or browning appears on the bottom of the pan, add a tablespoon or two of broth and stir to clean the bottom of the inner pot. Stir in remaining broth, whole hominy, blended hominy, and rehydrated Soy Curls®. Cover partially with lid; simmer 10 minutes. Press [CANCEL]. Stir in salsa verde and chopped cilantro. Serve.
