HEALTHY VEGAN BUTTERFINGERS!
Ok ok- these are incredibly addictive so just be warned they might not last in your house for very long…we would reco buying our 1KG bar of choco so you can never be without lol (plus it’s a more cost effective way to enjoy the benefits of dark chocolate!).
Here’s what you’ll need:
-2.5 cups of any crispy cereal (80g // rice crisps, corn flakes, cheerios or wheat bran)
-½ cup + 1 Tbsp smooth natural peanut butter (135g)
-¼ cup maple syrup (80g)
¼ tsp GY pink mt. salt
-2 oz GY chocolate of choice (84g- or 1.5 bars)
Directions:
In a food processor fitted with an “S” blade add 2 cups of the cereal of choice and blend until broken down.
Add maple syrup, peanut butter and salt and blend until mostly combined. Add in the remaining ½ cup of cereal and blend until well combined.
Press into a 8”x8” parchment lined baking tray. Place in the freezer for 15 minutes, remove and cut into 12 pieces.
Place back into the freezer.
While bars are cooling, melt chocolate via double boiler method (or in a microwave if ur into that lol) until smooth. Remove bars from freezer and dip them in the melted chocolate.
Place them on a wire rack or parchment lined baking tray and return to freezer or fridge until set.
