Mango season here in Sydney Australia which means it's time to make the infamous Mango Pomelo and Sago Dessert, a dish that almost every single dessert place in Hong Kong would serve and is always sold out in summer and in winter too for that matter.
Very simple dish to make that requires a small handful of ingredients:
- Sago
- Mangoes
- Pomelo
- Milk
- Coconut Milk
The hardest ingredient is probably the Pomelo as it's generally quite expensive and might not be sold everywhere.
Trick to this dish is how you treat the sago. Many may just boil it and although that's definitely doable, follow the steps below to make it easier and more bitey:
1. Soak the sago in water for around 10 minutes before boiling
2. Boil the soaked sago for around 5 minutes
3. After 5 minutes boiling, turn off stove and cover the pot with a lid for 15 minutes
4. After that, drain out the water and soak the sago in cold water until it's chilled. You can soak it in ice water to speed things up
What this does is it makes the sago more translucent which is atheistically more appealing, but it also gives the sago more texture and generally sticks together more so each bite is more pleasurable.
