A protein-rich preparation with masoor dal and onions flavoured with an authentic Maharashtrian masala.
MASOOR DAL KANDA
Ingredients
2 cups soaked and drained split red lentils (masoor dal)
2 medium onions (kanda)
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
A pinch of asafoetida (hing)
2 green chillies, chopped
A sprig of curry leaves
Salt to taste
1 tbsp ginger-garlic paste
1 medium tomato, chopped
½ tsp turmeric powder
1 tsp red chilli powder
½ tsp garam masala powder
2 tsps kanda lasun masala
2 tbsps chopped fresh coriander
Coriander sprig
Rice bhakri for serving
Method
1. Chop onions.
2. Heat oil in a kadai. Add mustard seeds and once they start to splutter, add cumin seeds, asafoetida, green chillies, curry leaves, chopped onions, salt and sauté for 2 minutes.
3. Add ginger –garlic paste and mix well. Sauté till onions turn golden brown.
4. Add tomato and mix well. Cook for 3-4 minutes or till oil separates.
5. Add turmeric powder, red chilli powder, garam masala powder and mix well.
6. Add masoor dal and mix well. Add1½ cups water and mix. Cover with a lid and cook on low heat for 10-15 minutes.
7. Add kanda lasun masala and mix. Add coriander and mix well.
8. Transfer in a serving bowl, garnish with coriander sprig and serve hot with rice bhakri.
