WHOLE CHICKEN ROAST
Ingredients:
• Chicken (whole, with skin) 1.4 kg
• Salt 2 teaspoons
• Paprika Powder 2 teaspoons
• Black Pepper Powder 1 teaspoon
• Garlic Powder 1 teaspoon
• Lemon Juice 1 tablespoon
• Lemons (wedges) 1 large
• Onions (wedges) 2 medium size
• Potatoes (cut in half or quarters) 8 medium size
• Olive Oil 3 tablespoons
Preparation:
Step by step recipe is given below:
1. In a small bowl, combine half of the salt, paprika powder, black pepper powder, garlic powder and mix them well.
2. Now take chicken and drizzle it with lemon juice.
3. Sprinkle with the prepared spices mixture and massage until the chicken is fully coated.
4. Stuff the chicken with onion and lemon wedges and tie the chicken legs together with kitchen thread.
5. Marinate for 30 minutes at room temperature.
6. Place the potatoes in a baking dish and season with the remaining salt.
7. Place the marinated chicken into the centre breast side up and scatter onion wedges around the chicken.
8. Drizzle with olive oil and bake in preheated oven for 75 – 80 minutes on 180°C.
9. When chicken is cooked, remove it from oven. Cover with aluminium foil and allow to sit for 15 – 20 minutes.
Serve, drizzled with pan juices and vegetables. And Enjoy!
