LOBSTER PASTA!!! CHRISTMAS RECIPE IDEA! How to cook lobster at home. One pot pasta. Delicious Christmas dinner.
Ingredients for 4 persons:
0,7lb/320g of linguine.
2 lobster (about 2,2lb/1kg).
3,5oz/100g of cherry tomatoes.
1oz/30g of tomato paste.
0,5gal/2l of water.
White wine.
Thyme.
Extra virgin olive oil.
Sichuan pepper.
Salt.
Method:
Cut the cherry tomatoes in half and leave to marinate with oil, garlic, basil, salt and pepper.
Boil the lobster alive for 2 minutes in plenty of salted water and let cool in water and ice. Separate the claws, boil them for another 2 minutes and let cool. Remove all the meat from the lobster and cut into pieces.
Brown the head and carapace with a drizzle of oil, blend with wine and allow to evaporate. Add the tomato paste, 2l of cold water, Sichuan peppercorns, thyme, salt and simmer for 20 minutes. Blend coarsely and filter. Add the cherry tomatoes chilli pepper and simmer for another 10 minutes. Remove chilli pepper , blend and filter again.
Bring 3 ladles of bisque to the boil and cook the linguine directly in the pan adding bisque when necessary. Out of flame, add the meat of the lobster and stir with oil and bisque.
Serve with plenty of sauce, lobster and cracked Sichuan pepper.
