Here is our take on the traditional Dum Pukht / Khadda Kabab. First Try! This is cooked in our backyard firepit. Minimum ingredients used. Salt and pepper, olive oil, garlic cloves and fresh coriander. You can add more spices as you like.
Notes on the first try:
Make sure the pit is closed properly to keep the heat inside
For a 1.5 KG meat, we left it in the pit for about 2 hours. 1.5 hours would have been enough
Need to put more veggies with the meat. Add potatoes and onion and use medium pieces.
On our next experiment, we will put some rice as well.
