Though not as familiar to many in the West, Jacques Pépin's chicken feet recipe uses a spicy Chinese chili garlic sauce that gives this dish a rush of flavor. This recipe would traditionally be thickened with arrowroot or corn starch, but Jacques substitutes ketchup.
