Ingredients
-1/2 cup dried elderberries
-2 cups water (distilled is best to make it last as long as possible)
-1/2 teaspoon ground cinnamon (or a cinnamon stick)
-1/4 teaspoon ground cloves (or a few whole ones)
-1 tablespoon fresh ginger (or a tablespoon of dried)
-1/2 cup raw honey
Directions
-Combine the elderberries, water, cinnamon, cloves, and ginger in a saucepan over medium heat and bring the mixture to a light boil.
-Lower the heat and allow the mixture to simmer until the water has been reduced by about 1/2, about 20 minutes.
-Pour the cooked berries and liquid through a fine mesh strainer, into a clean bowl. Use the back of a spatula to press on the berries in the strainer.
-Allow the elderberry juice to cool to room temperature, so that the heat doesn't harm the nutrients in the honey.
-Stir in the honey, then transfer the syrup into a sealed glass jar that you can store in the fridge.
