GREEK CHICKEN BOWL 🐓🔥
This is a simple healthy delicious meal that is great for lunch or dinner and also can be multiplied for meal prepping! 💪🏻

INGREDIENTS (estimated measurements)
Chicken:
- 8 Trimmed Boneless Skinless Chicken Thighs (~2.5 lbs)
- ~ 1/2 cup Extra Virgin Olive Oil
- ~ 2 Tbsp Salt
- ~ 2 Tbsp Pepper
- ~ 2 Tbsp Garlic Powder
- ~ 2 Tbsp Onion Powder
- ~ 2 Tbsp Dried Oregano
- ~ 2 Tbsp Dried Parsley
- ~ Zest of 1/2 Lemon
- ~ Juice of 1/2 Lemon
Salad:
- ~ 2 cups Diced Cucumber
- ~ 1 cup Diced Tomato
- ~ 1 cup Diced Red Onion
- 2-3 Tbsp Extra Virgin Olive Oil
- Splash of Red Wine Vinegar
- Seasonings: Salt, Pepper, Garlic Powder to taste
Tzatziki:
~ 1 cup Fat Free Plain Greek Yogurt
~ 1/2 cup minced or shredded Cucumber
~ 3 Tbsp fresh chopped Dill
~ Salt / Pepper / Garlic Powder to taste
~ 2 Tbsp of Extra Virgin Olive Oil
~ 1 Tbsp of Lemon Juice
Jasmine Rice:
- Cook according to instructions on package.
DIRECTIONS
1. Place Chicken in large bowl with all seasonings and cover. Let marinade for 1-24 hours (longer the better)
2. Prepare Tzatziki Sauce & Salad. Place in fridge.
3. Place chicken on greased baking sheet and bake at 425 degrees for 20 minutes then broil for 5 minutes.
4. Remove chicken and let it rest for 5-10 minutes. Then cut it up.
5. Assemble your bowl & ENJOY! 🙌🏻
