Pork Estofado with Pineapple Bits
Estofado is the Spanish word for stew, and Filipino Estofado is a dish made out of pork stewed in soy sauce and vinegar with bananas or pineapple tidbits. If you wish to add plantain banana instead of pineapple tidbits, cut the bananas into thick slices, then pan-fry first before adding them into the Estofado. Add them last so that they do not turn into mush. If you wish to add both pineapple tidbits and plantain banana, by all means, do so! 😊

You will need:
400 – 500 grams pork
For the marinade
1 cup cane vinegar
1 tbsp dark soy sauce
2 – 3 pieces bay leaves, shredded
2 tsp whole peppercorns, coarsely crushed
2 tsp coarse salt
1 head garlic, peeled and crushed
1 can pineapple chunks/bits drained, reserve syrup
1 tbsp brown sugar
1 tbsp additional brown sugar, optional
Procedure:
For the marinade
In a bowl, combine and mix all the ingredients for marinating. Add the pork and mix well to coat the meat.
Set aside in the fridge for about 30 minutes or better if overnight.
For the Pork Estofado
Drain the meat and set aside the marinade. Remove the bits of garlic and pepper from the meat before pan-frying. REMEMBER! Set aside the garlic and pepper in a bowl – you will use them later. NOTE! Peppercorns tend to burst in hot oil, so try your best to remove them as much as possible.
In a deep saucepan, heat oil and fry, and brown the meat on all sides until golden brown. Remove from the pan, then set aside.
Add and saute the garlic and pepper from the marinade in the same pan. Add the marinade left in the bowl, then bring to a boil.
Then put the pork back into the saucepan. Cover and simmer for 15 minutes or until pork is almost tender.
Add the pineapple juice and pineapple bits. Cover and simmer for another 15 minutes.
Taste the sauce, and if you want your sauce to be a bit sweeter, add the remaining sugar and add soy sauce to add some color to the dish. Simmer for another 5 minutes.
Transfer to a serving plate. Enjoy! ❤
