GRILLED PEACH SUMMER SALAD
It’s peach season! Our neighbors went to a local farm and brought us back a ton of peaches. Naturally we whipped together this perfect summer salad with honey balsamic dressing. The flavors of everything couldn’t be any better friends. It’s absolutely delicious, juicy, beyond refreshing. This was my first time making candied pecans and honestly there’s no other way to add nuts to a salad unless it’s candied. These were outrageously good. The whole family loved it. We paired this with grilled chicken breast to add protein. Seb had a deconstructed version and asked for more grilled peaches. Let me know if you try this.

Honey Balsamic Dressing:
2 tbsp balsamic vinegar
1/3 cup olive oil
1 garlic clove
2 tbsp raw honey
1/2 tsp Dijon mustard
Salt
Pepper

Candied Pecans:
1/4 cup brown sugar
1 tbsp water
Halved pecans
Salt

Salad Ingredients:
3 grilled peaches brushed with olive oil
Blackberries
Blueberries
Mixed spring lettuce
Crumbled feta cheese
Candied pecans
Protein of choice - we added grilled chicken breast
