Medu Vada is very popular and traditional recipe of Tamil Nadu made with Urad dal/Ulundu. Today we will see how to make Murunga Keerai Medu vada. Murunga keerai medu vada is the same like usual medu vada, the only thing we will add Muranga keerai (extra) to the mix. Murunga keerai ulundu vada is very crispy and soft. Murunga keerai ulundu vada taste so delicious and this recipe is very easy to make once you get the right consistency of the batter. Also, Medu vada is served with tea, idli, dosa, Pongal, sambar vada, Dahi vada, rasam vada. The most important part of making the batter is grinding it without adding much water. MURUNGA KEERAI MEDU VADA / MURUNGA KEERAI ULUNDU VADA RECIPE:
INGREDIENTS:
1 cup Urad dal
2 big Onion
4 green chilies
Curry leaves (few)
Coriander leaves (few)
Murunga keerai leaves (more)
2tsp Cumin seed
Salt
Hing
Ginger (small)
1tsp black pepper
METHOD:
Wash and soak Urad dal in water for 2 hours. Drain the water completely and add it to a grinder, sprinkle some water and grind it to a very soft and fluffy batter. Do not add too much of water while grinding,
Transfer the batter to a bowl and add cumin seed, black whole pepper, green chilies, ginger, curry leaves, coriander leaves, drumstick leaves, asafoetida powder (hing), and onions. Beat it nicely with hands so that the vadas turn out fluffy and light.
Heat a pan with oil, wet your hand with water and take some batter, make a small round, and hole in the middle part with your hands.
Drop it the oil over medium heat. Turn the vadas on both sides and fry until both sides are golden brown and crispy. Oil should be really hot.
Delicious and Crispy Murunga keerai medu/ulundu vada is ready to serve.
