This 4 minute video shows the difference between the Edit Vertices tool and the Reshape tool.
The Edit Vertices tool allows some very fine editing of geometry whereas the Reshape tool lets you "carve up" your polygon.
I move and delete some vertices on a polygon and then reshape the polygon by drawing a line
