Fresh ground wheat flour, and simple ingredients! This bread is the BEST!!

Using a Nutrimill grinder, or other grain grinder. Measure 2.5 lbs of hard white (5 Cups) or red wheat berries and grind them in your grinder. This should equal about 8-10 cups of fresh flour. Set aside. This recipe makes 3 loaves. You can also use store bought bread flour (not all-purpose flour). I recommend King Arthur.


In a large mixer with dough hook attached (Bosch or KitchenAid) add 3 C water, 1/3 C oil, 1/3 C honey. Add 3 C of flour and mix it just a little. Then add 1 1/2 Tbsp SAF instant yeast, and a bit more flour. Then add 1 Tbsp salt and continue adding flour until the sides of the bowl are clean and the dough doesn't look too wet. You can also add a couple Tablespoons of vital wheat gluten if you like a chewier bread. Knead the dough in the mixer for 5-7 minutes.
Cut dough into 3 equal pieces and form dough to fit the bread pan. My pans are 4"x8"x3"pans. Spray bread pans, place formed dough in pan and let rise until the bread is just above the lip of the pan. Bake at 350° for 30 minutes. When done baking remove bread from pans when it comes out of the oven. Enjoy!!! This bread freezes well, and makes great sandwiches, and a delicious side to soup.
