Ingredients
·½ cup pre-rinsed quinoa
·1½ cups filtered water
·2 small cucumbers, diced
·12 cherry tomatoes, halved
·1 small bunch fresh parsley, chopped
·5 green onion, sliced
·¼ medium red onion, diced
·1-2 garlic cloves, minced
·mint leaves, chopped (optional)
·10 kalamata olives
·1 tbsp fresh lemon juice
·2 tbsp olive oil
·¼ tsp sea salt, to taste
·¼ tsp black pepper, to taste
·Crumbled feta cheese (can use vegan feta cheese)
Method
Step 1: If not using pre-rinsed quinoa, pour the quinoa into a fine mesh strainer and rinse under running water for at least 1 minute; drain well.
Step 2:Add the quinoa to a small saucepan over medium-high heat and toast for about 2 minutes.
Step 3: Add the water and bring to a boil over medium-high heat, then decrease the heat to simmer. Cook until the quinoa has absorbed all of the water, about 15-20 minutes.
Step 4: Remove from heat covered and allow the quinoa to steam for 2-3 minutes. Fluff with a fork; set aside.
Step 5: In a medium sized bowl, combine the cooled, cooked quinoa, cucumbers, tomatoes, parsley, green onion, red onion, garlic, mint, olives, lemon juice, olive oil, salt, black pepper and feta cheese; store in refrigerator.
