A wonderful Malabar dish that has the flavors spicies and offers several gastronomic opportunities. The food is generally fresh, aromatic and flavored.
MALABAR PANEER
Ingredients
250 grams cottage cheese (paneer), cut into 1 inch cubes
1 tablespoon oil + for deep-frying
1 teaspoon mustard seeds
5-6 curry leaves
2 green chillies, slit
1 medium onion, finely chopped
1 tablespoon ginger-garlic paste
¼ teaspoon turmeric powder
1 cup coconut milk
Salt to taste
Method
1. Heat sufficient oil in a kadai. Deep-fry cottage cheese cubes till golden brown. Drain on absorbent paper.
2. Heat oil in a non-stick pan. Add mustard seeds and let the seeds splutter. Add curry leaves, green chillies and onions, mix and sauté till onion turns translucent.
3. Add ginger-garlic paste, mix well and sauté for 1-2 minutes. Add turmeric powder and mix well.
4. Add fried cottage cheese cubes and mix well. Add coconut milk, mix and cook for 1-2 minutes. Add salt and mix well.
5. Serve hot.
