This video recipe will show you how to make a classic asian style steamed fish dish that is often served in a good chinese restaurant. This is a really easy recipe and can be done using either whole fish or fish fillet as shown in this video. The special soy and ginger sauce is really what makes all the difference. The full recipe is below

400g barramundi fillet*
8-10 thick slices ginger
30g ginger, julienned
1 spring onion, julienned
1 red chilli, julienned
1 tbs soy sauce
½ tbs fish sauce
½ tbs sesame oil
¼ tsp sugar
⅛ tsp salt
2 tbs peanut oil
* other white fish fillets such as cod or tilapia will also work well for this dish.
Assemble slices of ginger onto a plate to act as a bed and place fish fillet on top of it.
Place into a steamer and steam covered for 8-10 mins.
While the fish is steaming, prepare sauce by mixing soy sauce, fish sauce, sesame oil, and sugar.
Discard the juices from the fish and ginger slices and gently place cooked fish onto a serving dish.
Arrange julienned pieces of ginger, spring onion, and chilli on top of the fish and sprinkle with pinch of salt.
Heat peanut oil in a small pot until smoking and pour over fish.
Once sizzling has stopped, pour sauce around the side of the fish and serve.
