Slurping noodles from a steaming bowl is great, but it's not the only way to enjoy your ramen. In Tokyo, a deconstructed style of the dish called tsukemen has become increasingly popular among Japanese ramaniancs. Renowned noodle master Ivan Orkin of Ivan Ramen is one of a handful of ramen chefs who have started to introduce New Yorkers to the gospel of tsukemen, in which cold noodles are dipped into a bowl of extra-potent broth to soak up flavor. Tsukemen is perfect for ramen obsessives who see noodles as the main event.
