Honeycomb
Eat them as candies, mix with any dessert, or use them as garnish, these easy to make sweet candies can be used in multiple ways to enhance a particular dish.
Recipe:
Ingredients -
Sugar - 1/2 cup
Honey/Golden syrup/Corn syrup - 1/4 cup
Water - 2tbsp
Soda Bi-carbonate - 1.5 tsp
Directions -
In a large deep pot, add water, sugar and honey
Put the pan on simmer on low heat. Do not stir at this point as it can crystalize sugar
Once sugar has dissolved completely, icrease the heat to medium and allow caramel to intensify
Cook until the temperature of caramel reaches to 150 C
Switch of the gas and add baking soda/soda bi-carb . Whisk immediately until fully incorporated
Once caramel turns frothy, transfer immediately to a lined baking tin or a clean marble surface.
Do not touch the candy here as it will be very hot. Let it cool naturally (take about an hour)
Once cooled, cut into your desired size and enjoy!
