Healthy Moonglet! Super soft, fluffy & melt in your mouth moonglet a power house of protein is topped with gooeyness of cheese & veggies of your choice. Also called as veg omelet is a health breakfast option.
Ingredients:
1 cup Moong Dal, soaked 3-4 hours
½ cup Water
1 tsp Turmeric
2 tbsp Rice Flour
Salt as per taste
1 tsp Ginger Garlic Paste
2 tbsp Onions, chopped
2 tbsp Tomatoes, chopped
2 tbsp Capsicum, chopped
1 tbsp Coriander, chopped
1 tsp Green Chillies, chopped
1 tsp Red Chilli Powder
½ tsp Fruit Salt
1 tbsp Water
2 tsp Oil
Topping:
Cheese, grated
Tomatoes, chopped
Spring Onion Greens, chopped
Method:
1. In a blender, add soaked moong dal, rice flour, turmeric powder, salt water mix well and grind it to a fine paste.
2. Remove the batter in a bowl, add onion, capsicum, tomato, coriander, green chilli, ginger garlic paste, red chilli powder & mix well.
3. Once done add fruit salt, little water & mix well again.
4. In a pan, heat some oil, add the batter, spread it evenly and let it cook.
5. Now flip the moonglet & let it cook on the other side.
6. Add grated cheese, chopped tomato, spring onion greens on top.
7. Cover and cook for about 4-5 mins (until crisp), serve piping hot with some tomato ketchup or green chutney!
