Beef slow simmered in trinity infused braising sauce until fall apart tender. Braising sauce then turns into gravy. Served over a bed of cheese grits.
Pound out approximately Two (2) pounds of round steak until pretty thin.
Season with Cajun/Creole seasoning to taste.
Cut into desired size and remove any undesirable areas of the beef.
Toss and coat with flour.
Heat large pot over medium heat, add high smoke point cooking oil.
Sear the beef until nicely browned.
(Cook in batched to prevent overcrowding and steaming of the meat to achieve nice browning action)
Scrap and remove the fond and stuck bits between batches to prevent burning.
Once beef is well browned, remove and set aside.
Add Four (4) Tbsp butter.
Add One (1) Large onion, diced.
Cook diced onion for approximately five to ten minutes.
Add 1/2 Green bell pepper and 1/2 Red bell pepper, diced.
Cook a few minutes with the onion.
Add Two (2) Tsp minced Garlic.
Add One (1) Cup dry red wine and cook a few minutes to remove alcohol.
Add One (1) Can (apx 12 ounces) stewed tomatoes and bust up.
Add One (1) to Two (2) Tbsp Cajun/Creole seasoning (to taste with salt content)
Add a tablespoon or two of Worcestershire sauce and Louisiana style hot sauce.
Add Four (4) cups of low sodium beef broth or stock
Add a couple of Bay leaves
Bring to light simmer, taste and adjust seasoning as desired.
Cover and simmer 1.5 to 2.0 hours or until the beef is very tender.
Once beef is tender mix up one tablespoon of corn starch with 1/2 cup of water or cooled braising liquid......... add the mixture and allow to simmer to thicken.
Add additional if desired. If too thick, think the gravy with water or beef broth.
Once gravy is where it needs to be, add two (2) Tbsp dried Parsley.
GRITS
Bring to boil two cups chicken broth, one cup half and half and one cup of water. Sprinkle in 1/2 to One (1) Tsp garlic powder.
Whisk in the instant grits and simmer, covered, five to ten minutes depending on instruction label.
Once grits are together, mix in One (1) cup of shredded cheese.
Taste for seasoning and adjust to taste.
