Finally, the sharpening of Kurouchi Urushi Gyuto has been completed!
We received it from the blacksmith and started sharpening it using the 200 grit from Diamond Stone, and in this video Ivan sharpened it with a natural sharpening stone.
It looks like there are a lot of sharpening stones on the Stone shelf at Ivan's, but there are fewer than before. This is still a very selective selection of Stones that he uses for his work. Even so, the best sharpening stone for each knife is different, so it is a difficult to choose one as well as to master the use of it.
