G R A V Y R E C I P I E
INGREDIENTS
2-4 Carrots
2 Red Onions
250g/8.81oz Chestnut Mushrooms
2-4 Sticks Celery
3 TBSP Plain Flour or Corn Starch
1/2 cup/120ml Red Wine
1-2 TBSP Soy Sauce / Tamari
1/2 TBSP Marmite / Vegemite
1-2 TBSP Balsamic Vinegar
1 TBSP Mushroom Seasoning
1-2 TSP Rosemary (or any dried herbs you like!)
3 cups/720ml Vegetable Stock (see video to make your own!)
Pinch Sea Salt & Pepper to taste
METHOD
1. Roughly chop carrots, celery, mushrooms and onions (leave skins on) and add to a large pan. Dry sautee for 15 or so minutes, cover to allow the veggies to sweat slightly and release liquids.
2. Add corn flour (or plain flour) and coat the veggies.
3. De=glaz the pan with the red wine, bring the sticky bits from the pan into the wine, mix well.
4. Add the seasonings: soy sauce, Balsamic Vinegar, Marmite, mix well. Add the stock, slowly, allowing the stock to pick up all the flavours.
5. Keep it moving, add mushroom seasonings, salt, pepper, dried herbs.
6. Mix, cover, turn down to a really low heat and let this cook for about 1 hour until the veggies are really, really soft (lobger the better).
7. Strain the gravy into another pan using a seive. Push the veggies down to release all of the gravy.
Serve! (You can make a huge batch and keep this in your freezer in portions)
