Super easy and tasty Fathead Pizza Crust recipe that does NOT require you to melt the cheese to combine. I never had good success with that method. I couldn't seem to combine the ingredients very well. This comes together quickly and is perfectly blended. Yay!!

Fathead Pizza Crust (Margie Style) - Low Carb
Ingredients
¾ cup super fine almond flour
8 oz package of fine shredded full fat mozzarella cheese
2 oz cream cheese, cubed
1 egg
Pinch of salt (optional, Italian seasoning, garlic powder)
Instructions
Preheat oven to 425. Make sure rack is in the center of the oven.
In a food processor, pulse dry ingredients (flour, mozzarella, salt and optional seasonings)
Dot in cream cheese, pulse to combine
Add egg and process till dough forms a ball (mostly)
Form dough into a disk, then roll out between two pieces of parchment paper to your desired thickness
Remove top parchment paper and poke dough with fork
Bake for 6-8 minutes
Remove from oven (*** lower oven temp to 350***) and top with sauce, precooked meat and veg, and additional cheese
Return to oven until cheese is melted (5ish minutes)
Allow pizza to cool and firm up a bit (5ish minutes), slice and enjoy!!

Alfredo Sauce
2 oz Cream Cheese
1 tablespoons butter
.5 ish cups heavy whipping cream
.5 cup parmesan or Fontina cheese
Light shake of Italian seasoning
Light shake of onion powder
Light shake of garlic powder
S&P to taste
Melt butter & cream cheese together, add seasonings, heavy whipping cream and cheese.
Another optional “white sauce” is Hidden Valley Ranch dressing (make your own from the dry packet, it’s INFINITELY better than the bottled version) top with pieces of rotisserie chicken, spinach leaves & shredded mozzarella. I hear this is what a big chain pizza place does!
