How I make Detroit Style Pizza in the @gozney Roccbox.
First, we’re working with an 8x10 pan. I am a parbaker when it comes to detroit crusts. I like to let the crust cool on a bakers rack to allow the moisture to escape and promote a crispy bottom. Then I’ll oil the pan and place the crust back in it.
For the cheese, i like a blend of preshredded cheddar and low moisture mozzarella. You want dry or starch added cheese to create that raised frico edge. I prefer the taste of caramelized cheddar over mozz so use cheddar around the edges and a blend of both in the center. This one is topped with @margheritameats cup n char pepperoni.
Next i like to bake the pizza in the fully preheated roccbox with the flame on low. If it cooks a little faster than i like, turning the flame all the way off works wonderful because this oven retains heat very well. The stone and insulation will do the work for you. Rotate 180 degrees after approximately 2-3 minutes amd cook for another 2-3 minutes until bottom is crisp, all cheese is melted, and caramelized cheese is brown and begins to separate from the pan.
Finish with some warmed sauce, @locatellicheese_official and fresh basil. That’s all there is to it! Happy National Pizza Day!
